Bon Appetit!<br \/>\n<a href=\"https:\/\/offthehookontheplate.com\/wp-content\/uploads\/2013\/09\/Pina-Colada-Grilled-Pineapples.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/offthehookontheplate.com\/wp-content\/uploads\/2013\/09\/Pina-Colada-Grilled-Pineapples.jpg\" alt=\"\" title=\"SAMSUNG\" width=\"1920\" height=\"2560\" class=\"aligncenter size-full wp-image-404\" srcset=\"https:\/\/offthehookontheplate.com\/wp-content\/uploads\/2013\/09\/Pina-Colada-Grilled-Pineapples.jpg 1920w, https:\/\/offthehookontheplate.com\/wp-content\/uploads\/2013\/09\/Pina-Colada-Grilled-Pineapples-225x300.jpg 225w, https:\/\/offthehookontheplate.com\/wp-content\/uploads\/2013\/09\/Pina-Colada-Grilled-Pineapples-768x1024.jpg 768w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\" \/><\/a><br \/>\n1 fresh pineapple peeled and sliced in 12 wedges (by cutting around the core)<br \/>\n2 tablespoons extra virgin olive oil<br \/>\n1 tablespoon cinnamon<br \/>\nCoconut cream-<br \/>\n1 8oz whipped topping (thawed)<br \/>\n1 teaspoon coconut extract<br \/>\nZest of one lemon<br \/>\nTopper &#8211;<br \/>\n1 cup shredded coconut<br \/>\nPreheat grill on medium high.<br \/>\nToss pineapple with olive oil and cinnamon.  Place on hot grill and grill on each side 4 to 5 minutes just until  pineapple get golden brown grill marks.  Remove and set aside<br \/>\nHeat oven to broil.  Place shredded coconut on a cookie sheet lined with parchment paper.  Toast coconut until golden.  Be careful not to burn. Remove and let cool a couple of minutes<br \/>\nMix whipped topping, coconut extract and lemon zest all together.  Two wedges per person top with whipped cream and toasted coconut!<br \/>\nYou can prepare the coconut ahead and place in a zip lock bag.  And also prepare the whipped topping and place in a Tupperware.  I take it all to the beach and after dinner grill the pineapple and top with toppings always a light but yet satisfying tropical dessert perfect to end a grilled fish dinner.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>It&#8217;s a great dessert to enjoy after a fish or seafood dinner.
