{"id":376,"date":"2013-06-30T12:24:36","date_gmt":"2013-06-30T12:24:36","guid":{"rendered":"https:\/\/offthehookontheplate.com\/?p=376"},"modified":"2014-12-15T10:23:25","modified_gmt":"2014-12-15T10:23:25","slug":"fishing-adventure-that-are-sure-to-end-with-an-off-the-hook-recipe","status":"publish","type":"post","link":"https:\/\/offthehookontheplate.com\/?p=376","title":{"rendered":"Fishing Adventures that are sure to end with an Off the Hook recipe!"},"content":{"rendered":"<p><iframe loading=\"lazy\" width=\"560\" height=\"315\" src=\"\/\/www.youtube.com\/embed\/shKjhBUeBWI\" frameborder=\"0\" allowfullscreen><\/iframe><br \/>\nFish Po Boy<br \/>\n8 small grunt filet or 4 tilapia filet<br \/>\n4 rolls toasted<br \/>\n\u00bd cup low fat mayonnaise<br \/>\n\u00bd cup cocktail sauce<br \/>\n24 dill pickle slices<br \/>\n4 deli sliced sharp cheddar cheese<br \/>\nTo cook fish follow instructions below for my perfect fried fish-<br \/>\n2 eggs beaten<br \/>\n1 teaspoon old bay seasoning<br \/>\n\u00bd teaspoon sea salt<br \/>\n\u00bd cup crushed Ritz crackers<br \/>\n\u00bd cup instant potato flakes<br \/>\n\u00bd cup Italian bread crumbs<br \/>\n2 cups canola oil.<br \/>\nAdd oil to a deep frying pan or cast iron pan on medium heat and let it heat up to 350 degrees no more than 375 degrees.<br \/>\nStart by mixing the eggs, old bay seasoning and sea salt together in a bowl.  Add fish and coat on all sides.<br \/>\nIn a separate shallow dish mix well crackers, potato flakes and bread crumbs.<br \/>\nTake your fish out of the egg mixture and tossed gently in the breading and coat well on all sides.<br \/>\nAdd to frying oil and fry 7 minutes on first side until breading start to golden a little flip and cook additional 7 minutes.  Remove and place on paper towel to drain any excess oil.<br \/>\nIn a small bowl mix mayonnaise and cocktail sauce together.  Cut buns in half and toast.<br \/>\nTo assemble the sandwiches place two tablespoon of sauce on both side of buns.  Place a slice of cheese on bottom bun top with 8 pickle slices, place fish on top of pickles and top with top bun.
