Webisode #9"},"content":{"rendered":"<p><iframe loading=\"lazy\" width=\"560\" height=\"315\" src=\"http:\/\/www.youtube.com\/embed\/M075UES_EUo\" frameborder=\"0\" allowfullscreen><\/iframe><br \/>\nFish Enchiladas<br \/>\n1 lb white fish cooked and crumbled<br \/>\n10oz can enchilada sauce<br \/>\n1 tablespoon olive oil<br \/>\n10 3\/4oz cream of shrimp condensed soup<br \/>\n2 tablespoons chopped green chilies<br \/>\n\u00bd cup black beans<br \/>\n\u00bd cup corn<br \/>\n\u00bc cup cilantro plus 2 tablespoons<br \/>\n1 lime juiced<br \/>\n10 small flour tortillas<br \/>\n1 \u00bd cup Mexican Taco shredded cheese<\/p>\n<p>Preheat oven at 375 and spray a 9 x 13 casserole and set aside.<br \/>\nIn a medium mixing bowl mix the soup and the sauce together and also set aside<br \/>\nCook fish in a tablespoon of olive oil on medium high heat for 5 minutes or until fish is cooked through.  Place fish in a large mixing bowl and crumble.  Add black beans, corn, green chilies, \u00bc cup cilantro, lime and \u00be cup sauce.  Mix well<br \/>\nUsing a small cookie scoop spoon 2 scoops of fish on flour tortilla roll and place in casserole repeat for all 10.  Pour remaining sauce all over the top of the enchiladas and top with cheese and the remaining 2 tablespoons cilantro.  Cover with foil and bake 35 minutes.
