{"id":116,"date":"2012-05-27T11:35:22","date_gmt":"2012-05-27T11:35:22","guid":{"rendered":"https:\/\/offthehookontheplate.com\/?p=116"},"modified":"2012-05-27T11:38:38","modified_gmt":"2012-05-27T11:38:38","slug":"offshore-fishing-adventures-that-are-sure-to-end-with-an-off-the-hook-recipe-2","status":"publish","type":"post","link":"https:\/\/offthehookontheplate.com\/?p=116","title":{"rendered":"Offshore fishing adventures that are sure to end with an off the hook recipe!"},"content":{"rendered":"<p><iframe loading=\"lazy\" width=\"560\" height=\"315\" src=\"http:\/\/www.youtube.com\/embed\/f4M1SYuixGc\" frameborder=\"0\" allowfullscreen><\/iframe><\/p>\n<p>Hogfish with orange sauce<br \/>\nPrep: 5 minutes Cook:  6 minutes Serve: 2<br \/>\n2 hogfish filet (you may substitute with orange roughy or flounder)<br \/>\n2 tablespoon extra virgin olive oil<br \/>\n \u00bc teaspoon Sea salt<br \/>\n\u00bd teaspoon old bay seasoning<br \/>\n\u00bc cup orange juice<br \/>\n2 tablespoons dry white wine<br \/>\n1 shallot chopped fine or \u00bc cup red onion chopped fine<br \/>\n2 tablespoons butter.<\/p>\n<p>On stove top on medium high heat in a sauce pan add orange juice, wine and shallots bring to a boil and let it reduce by half.   Next add butter and whisk until butter is all melted and well incorporated.<br \/>\nDrizzle fish with1 tablespoon extra virgin olive oil season fish on both side with sea salt and old bay seasonings.<br \/>\nIn a frying pan on medium high heat add 1 tablespoon of olive oil cook filets for 4 minutes, turn and cook an additional 2 to 3 minutes.  Until fish is white all the way through do not overcook.<br \/>\nPlace \u00bd of the sauce in a plate and top with filet do this for both filets.  You may garnish with scallions and orange zest.
